Sauce Poivre. Made with peppercorns and cognac mixed with heavy cream, this rich and flavorful sauce is a simple way to add something more to your favorite steak recipe. Raise the heat to high, and add the pepper and brandy to the pan.
It consists of a mirepoix that is thickened with flour, along with wine, vinegar, and a hefty dose of pepper. Serve the sauce over the steaks right away. Now for the seasoning, sprinkle the salt on your cutting board.
Cook, basting steak continuously, until an instant-read thermometer inserted into the thickest.
In a medium skillet over medium heat, melt the butter and olive oil.
